Today we began our 4th of July by savoring red velvet pancakes, whipped cream cheese and fresh berries. I was inspired by a recent trip to CiCi’s Cafe and decided why wait? As part of my continuous efforts to enhance my culinary skills, or lack there of, I googled several red velvet pancake recipes before ultimately deciding on this one. Next time I make them I will add just a bit more food coloring but recipe wise I wouldn’t change a thing. I also made whipped cream cheese using this recipe. Not only was it delicious on the pancakes but perfect for strawberry dipping! The Little Miss and the Mr. both seemed to enjoy this mornings breakfast, a nice take on the “traditional” pancake not to mention, it was my first time making pancakes from scratch.

After having the breakfast of {Fourth of July} Champions I am now looking forward to a day of fun with family and friends complete with bbq, beautiful fireworks and of course dessert.
